Ginger Banana Muffins & Miracle 1 hour bread

Oh- GOOOOOOOD Mornin'!  These are DELISH!  I modified the original recipe a little and it was amazing!!!!!!!!  My roommates agree :-)

Ginger Banana Muffins
Modified from original recipe.



Mix Streusel and set aside:
3/8 cup all-purpose flour
3/8 cup sugar
1/4 teaspoon salt

2 tablespoons butter

Mix wet ingredients and set aside:
6 tablespoons butter, softened
3/4 cup plain yogurt
2 eggs
2 ripe bananas, lightly mashed
1 tsp vanilla extract

Mix dry ingredients THEN add to wet ingredients:
1 cup all-purpose flour
3/4 cup whole-wheat pastry flour
1/4 cup fine ground corn meal
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
2 heaping teaspoons ground ginger
1/4 teaspoon nutmeg


Distribute batter equally into 12 muffin tins.  Top each with a spoonful of streusel.  Bake at 350'F for 20-25 minutes.  Make sure you flip the pan around mid-baking to ensure uniform cooking.  THEY ARE SO TASTY!  Enjoy with a nice tall glass of milk :-)

Miracle 1-hour Bread
From Pantry Secrets

Mix in mixer:
10 cups white/wheat flour (whichever)
1/2 c. sugar
1 TBS salt
3 rounded TBS instant yeast

Add:
3 TBS liquid lecithin (eyeball the measurement directly into the bowl b/c it won't come off your measuring spoon)
4 cups HOT tap water

  1. Let mixer kneed dough for 5 minutes.  It WILL be sticky, but you don't want it "wet".  After it has been kneaded, don't add ANY flour.  
  2. Cut into 4 chunks and form into 4 bread loaves on a PAM sprayed surface- NO FLOUR! (I roll these out like I am going to make cinnamon rolls and just roll them up.  That gets rid of bubbles in baking.)  
  3. Then, place loaves in pam sprayed loaf pans and cover.  Let rise 25 minutes.  
  4. Beat 1 egg and rub over the top of each loaf for golden brown color.
  5. Then, bake at 350'F for 25 minutes.

ENJOY warm with butter and jam or use for your sandwich bread :-)
