Combine dry ingredients:
1 3/4 cup wheat flour
3/4 cup brown sugar (I use brown sugar to make it richer esp. when using wheat flour)
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/2 tsp ground cinnamon
Combine wet ingredients and fold into the dry ingredients. Don't over mix. (*Note from original recipe: The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread)
2 large eggs, lightly beaten
1/2 cup unsalted butter, melted and cooled
3 large ripe bananas, mashed well (about 1-1/2 cups)
1 tsp vanilla extract
Streusel Topping:
1 cup wheat flour
3/4 cup brown sugar
1/4 and 1/8 cup butter
1/2 TBS white sugar
1/8 tsp cinnamon
Pam spray your muffin tins. Preheat oven to 350'F and dish 1/4 cup of batter into each muffin tin. Top with the Streusel topping. Bake for 20-25 minutes on the middle rack of your oven. Makes 12 muffins.

The Zucchini bread was good, but I just have never really gotten into Zucchini bread or Banana Bread. I don't know...but it was a good recipe.
Mix wet ingredients:
3 large eggs (whip until light and foamy)
then add:
1/2 cup olive oil
1 1/2 cups brown sugar
2 tsp vanilla extract
then add:
3 cups shredded zucchini
Mix dry ingredients and add to the wet. (Again, don't over mix)
3 cups whole wheat flour
1 1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1/2 tsp nutmeg
3 tsp cinnamon
1/4 tsp pumpkin pie spice
Streusel Topping:
1 cup wheat flour
3/4 cup brown sugar
1/4 and 1/8 cup butter
1/2 TBS white sugar
1/8 tsp cinnamon
Mix together. Spray two large 9" loaf pans with pam spray, then line with parchment paper, then spray with pam spray again. Fill with the batter. Add Streusel topping. Bake at 350'F for 50-60 minutes. Let cool for 10 min before removing the bread using the parchment paper. Yum :-)
